Title: Quebec Cabbage Soup

Yield: 4 Servings

HEALTHY FIREHOUSE COOKBOOK
1cGreen cabbage; shredded
1/4cOnion; finely chopped
1/4cCarrot; finely chopped
1tbShallot or scallion; minced
1clGarlic; finely chopped
4cChicken broth; low sodium
1/8tsSalt
1/8tsBlack pepper
1tbFresh parsley; chopped

Spray a med. saucepan with nonstick cooking spray. Add the cabbage, onion, carrot, shallot, and garlic. Cover and cook over med-low heat for about 5 mins., or until the vegetables soften. Add the chicken broth, salt, and pepper. Bring to a simmer and cook, partially covered, for about 20 mins., until the vegetables are very tender. Serve hot, garnished with parsley.
